For 1 lb of pasta. The texture isn’t quite Alfredo (it is not creamy), but the flavor is good.

  1. Blend tofu, nutritional yeast, butter, oil, and seasonings until smooth.
  2. Add lemon zest, juice, and capers.
  3. Taste and adjust seasoning, lemon, and capers. Brine from capers can be used if there isn’t enough lemon.
  4. After draining pasta, return to hot pot, add sauce, and mix.
