Vegan Alfredo

For 1 lb of pasta. The texture isn’t quite Alfredo (it is not creamy), but the flavor is good.
Ingredients
- Silken tofu: 1 lb
- Nutritional yeast: 1/2 cup
- Vegan butter: 1/4 cup
- Salt: 1/2 tsp
- MSG: 1/2 tsp
- Garlic powder: 1 Tbsp
- Onion powder: 2 tsp
- Black pepper: 1 tsp
- Olive oil: 1tbsp
- Lemon zest: 1/2 lemon
- Lemon juice: 1 Tbsp
- Capers: 2 tbsp
Steps
- Blend tofu, nutritional yeast, butter, oil, and seasonings until smooth.
- Add lemon zest, juice, and capers.
- Taste and adjust seasoning, lemon, and capers. Brine from capers can be used if there isn’t enough lemon.
- After draining pasta, return to hot pot, add sauce, and mix.
