Chocolate Chip Muffins

Makes 12 muffins.
Ingredients
- Soy milk: 1 cup
- Apple cider vinegar: 1 tsp
- Flour: 250 g
- Granulated sugar: 150 g
- Baking powder: 2 tsp
- Salt: 1/2 tsp
- Cornstarch: 1 Tbsp
- Butter: 1/2 cup, melted
- Vanilla extract: 1 Tbsp
- Chocolate chips: 1 1/2 cups
Original recipe calls for 200 g sugar, but I found it to be too sweet.
Steps
- Preheat oven to 400°F.
- Grease muffin tin.
- Combine soy milk and vinegar.
- Whisk dry ingredients, including sugar, in bowl to combine.
- Add wet ingredients.
- Stir to combine.
- Mix in chocolate chips.
- Fill muffin tin. The tin will be filled most of the way.
- Bake 25 minutes.
- Cool 5 minutes before removing from muffin tin.
I store them in the fridge, and heat them for a few seconds in the microwave before eating, but the original recipe says they are fine on the counter.
