Chocolate Chip Muffins

Makes 12 muffins.

Ingredients

Original recipe calls for 200 g sugar, but I found it to be too sweet.

Steps

  1. Preheat oven to 400°F.
  2. Grease muffin tin.
  3. Combine soy milk and vinegar.
  4. Whisk dry ingredients, including sugar, in bowl to combine.
  5. Add wet ingredients.
  6. Stir to combine.
  7. Mix in chocolate chips.
  8. Fill muffin tin. The tin will be filled most of the way.
  9. Bake 25 minutes.
  10. Cool 5 minutes before removing from muffin tin.

I store them in the fridge, and heat them for a few seconds in the microwave before eating, but the original recipe says they are fine on the counter.
