Bread Pudding

Ingredients
Scales up and down well, depending on amount of stale bread. Half a loaf of the Parisian loaf from Market Basket works well with these quantities.
I found the amount of brown sugar to be a little too sweet for the pudding to go well with ice cream, but it also wasn’t very good at all with less. It might be good to make it with less and then adding a glaze of some kind?
I tried including nutmeg, but didn’t like it. I need to try it again with significantly less.
- Stale bread
- Soy milk: 2 cups
- Brown sugar: 1/2 cup
- Ground flaxseed: 2 tbsp
- Vegetable oil: 1 tbsp
- Vanilla extract: 1 tsp
- Ground cinnamon: 1/2 tsp
Steps
- Cube bread and add to large bowl
- Mix soy milk, sugar, flaxseed, oil, vanilla, and cinnamon together.
- Pour over bread in large bowl and stir to combine, getting all of the bread wet.
- Let soak, stirring occasionally, until all of the bread is soft with the milk. This can take 20 min to an hour, depending on how stale the bread is, shape of the bowl, etc.
- Preheat oven to 350°F.
- Pour mixture into greased pan. Greasing the pan is important, because the sugar mixture likes to stick! A loaf pan is tempting to have more soft bits, but it doesn’t cook through well, so stick with a cake pan and cover with foil at some point during baking if you want to avoid it getting too crispy.
- Bake for about 1 hour.
